Raw Vegan Fudge | My Clean Cutting Board
Even us health nuts need some sweets every once in a while. I just try to keep it as natural as possible. I made this fudge after tasting Glasser Farms’ fudgy brownies. I like chocolate. I’m not a huge fan that needs it all the time but I like it every once in a while. I had some cool, unused ingredients in the house so I blended them together and made magic. Now, I usually just throw stuff together so let’s hope I remember what I did.
Here’s what I think I did ; )
- 2 tbsp almond butter
- 3 pitted medjool dates
- 1/2 cup of fresh shredded coconuts
- 1 tbsp raisins
- 1 tbsp raw cocoa powder
- 1 tbsp almonds plus more chopped almonds for the top
Blend all ingredients together (I probably should have added 1 teaspoon of coconut oil to make the fudge harder when cooled, but I’m not sure) in high speed blender (I used the Vitamix) or food processor until creamy or until desired consistency and lay flat on parchment paper about 1/2 inch thick. Top with chopped almonds. Place in refrigerator overnight to harden. And voila! It should come off the parchment paper just fine if you let it cool overnight. I kept checking every few hours but it was very soft until the next day.
This spoonful was before it hardened. After it hardened I was able to cut it with a knife.
