My Old Biography

My first biography was written when I was starting to heal in 2013. I had no idea I would be where I am today.  I am now a picture of health and life. Back then I was sick and frail and all I had was faith. I couldn’t breathe but I wanted to. I was determined to get better. My mission then was to heal the world with good news and good food. But I didn’t really know what that meant.  3 years later, my goal is the same. But now I know what I’m talking about and have a better idea of where I’m going. Things have changed tremendously since then. The biggest change has been the reduction of several medications I was on. I also started school again after 11 years. I have many dreams but will ultimately follow whatever path God has for me. I would love to help others overcome autoimmunity. I would also like to combat obesity, especially in children. We will see where the road takes me. Like I said at the beginning. God’s not done with me yet! Now I will go finish my new bio, one that speaks of hope, love, and testimony.

This is my journey through Lupus and Pulmonary Hypertension and how I’ve chosen to heal myself with food. I’m not against conventional medicine. However, I don’t think you have to be a slave to it forever. I was diagnosed with Lupus in 1998 and have been on corticosteroids (which can damage your bones, liver, and much more) ever since. In 2009, after the lupus had caused some damage to my heart and lungs, I was diagnosed with Pulmonary Hypertension.

It’s been a rough road but I have never felt sad, lonely, or unfixable. My faith in God has always kept me hopeful. My supportive friends and family have kept me happy. And my willingness to change has made me wiser.

I’m currently on 9 different medications plus tens of other supplements. I don’t ever remember not having to take a pill. I’ve been on meds for over 20 years. Although I’m on a gazillion medications and treatments, I believe that food is all the medicine we need. If we eat correctly all our problems (acne, stomach-aches, headaches, immune disorders and yes even cancer) can disappear.

I have decided to try functional medicine, which focuses on finding the underlying problem instead of covering the symptoms for relief. I have a goal to be medicine-free by 2015.

I have been eating organic for 2 or 3 years but have been truly committed to a complete transformation for 3 months. That means (under the supervision of a functional medicine doctor) I have not had gluten, eggs, or sugar. I haven’t had much dairy except for a little butter. It sounds like I am starving myself. But no. I have had the time of my life making awesome dishes from scratch. I want you to know it’s possible and much easier than you think. I hope I can inspire you to make gradual changes. Each day you complete your goal is a major accomplishment that should be celebrated.
